Autumn, Pumpkins, and Pumpkin Bread

**For those of you linking over here from Lysa's blog, this is an old post, but the recipe for the pumpkin bread is DELICIOUS! I didn't want to post a new post, because I have some urgent prayer requests on the home page and don't want to take away from that right now. Sorry! :) This pumpkin bread makes 3 (8x4 in) loaves, so it's great to make around the holidays and give away. Enjoy!

It is the season of Autumn. Can you believe it? Halloween, Thanksgiving, and then Christmas will be here before we know it. This year has flown by! I've always heard the saying that "time flies by quicker as you get older." I'm only 25, and time is flying by a whole lot faster than when I was 15. I don't even want think about what it will be like when I'm 45. Agh!

I have my home decorated with fall stuff. Autumn leaves, my autumn wreath that I made last year from scratch (yes, I made it!), pumpkin spice candles, and an autumn floral arrangement. I actually decorated in early September. However, I did just put out some pumpkins and a scarecrow in my front yard. Since it's almost Halloween, I bought a plastic jack-o-lantern (already carved...I cannot carve pumpkins!) with a light in it today. I can't wait to see what it will look like on my front porch tonight when it gets dark.

I saw my friend Stephanie at the grocery store and I was getting some canned pumpkin. She asked if I was making a pumpkin pie. No, I do not make pumpkin pies. I do not like pumpkin pie. I make pumpkin bread. That's the only kind of pumpkin I will eat. And to be real honest with you, I make pumpkin bread all year long. But it is so much fun to make it at this time of year, just because of the season. My pumpkin bread recipe makes 3 loaves and it is DELICIOUS! So, here is the recipe. Give it a try. You will love it!

Ashley's Pumpkin Bread
3 1/3 cups flour
3 cups sugar
2 teaspoons baking soda
1 teaspoon cinnamon
1 1/3 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup water
1 cup vegetable oil
4 eggs
1 - 15oz can pumpkin
Preheat oven to 350 degrees. Grease 3 (8x4 inch) loaf pans. Mix all ingredients together. Pour into loaf pans. Bake at 350 degrees for 55 minutes or until a toothpick comes out clean. Enjoy!
I like to make this at Christmas time to give to friends. It's easy and delicious!

I LOVE that pumpkin bread recipe. The kids actually do too!! Thanks for making me think about fall. It's 95 here and I'm not quite in the mood yet! (I gave the Homemakers office your question about our shirts)

Okay. I just made the bread. I think I may eat an entire loaf all by myself! I added some walnuts and chocolate chips to one of them...oh my goodness! Delicious. Thank you!!

No wonder we are friends - I, too, LOVE fall! I love p. bread, too, and will share a yummy recipe for creamy pumpkin pie w/ cranberry topping. It is like a cheesecake and doesn't taste like pumpkin! Anywho... HAPPY FALL!!!
